Chicken Fried Rice
Trim Healthy Mama Recipe
Ingredients
1.5-2 cups brown rice
3 chicken breasts cooked and diced
1 cup shredded carrots
1 cup peas
1/4 cup diced onion
1 cup scrambled egg whites
1 tbs sesame oil ( can also use vegetable broth or water)
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp black pepper
1/8 tsp cayenne pepper
Instructions
1. Preheat over to 375 degrees
2. Place rice in an 8in square baking dish
3. Boil water and pour over ricem stir to combine
4. Place chicken on top of rice, cover dish tightly with aluminum foil and place on middle rack of oven for 1 hour
5. Once rice and chicken are done cooking, cut chicken in small cubes. Lightly sautee all vegetables and speices in a pan with sesame oil
6. Scramble egg whites
7. Combine all cooked ingredients into serving bowl
Dinner is served!
